Lentil Chili

I found a great, super easy recipe for lentil chili that I thought I'd share. (I don't know about anyone else, but cooking with lentils is new for me - so if you have any other ideas, I would love to hear them!)

Ingredients:
2 tsp olive oil
1/2 cup chopped onion
2 garlic cloves, minced
2 TBS chili powder
1 TBS ground cumin
1 tsp dried oregano leaves
1/8 tsp cayenne pepper (we used 1/4 tsp and I still wouldn't call it "hot")
4 cups (or more) water
1 cup dried green or brown lentils
1/2 cup tomato puree (we just threw in several frozen tomatoes from last years garden - it worked great!)
1/3 cup plus 2 TBS chopped green onion

Directions:
1. Heat oil in a soup pot over medium heat.
2. Add the onion and saute for 2 minutes.
3. Add the garlic and saute for another 30 seconds. Add chili powder, cumin, oregano leaves, and cayenne pepper; stir for 30 seconds.
4. Add the 4 cups f water, lentils, and tomato puree (or frozen tomatoes). Increase heat and bring to boil, skimming off any foam from surface (I actually didn't worry about this). Reduce to medium heat and simmer until lentils are tender. Add more water by 1/4 cup if necessary.
5. Once lentils are tender, stir in 1/3 cup of green onions. Season chili to taste with salt and pepper. (Remaining green onions are for sprinkling individual servings, if desired)

Serves 4.

oh yippee! I was going to try a different lentil recipe but this sounds so good I think I'll try this on Thursday instead.
I just got some organic lentils from Whole foods and I think i have everything else I need...yum yum, thanks for sharing!

I have a bunch of frozen diced tomatoes from this past summer! (I could only make so much salsa and pasta sauce...) This sounds like a perfect way to put those to use.

Hey! I finally tried this out today, and it turned out great. Ted liked it, too, which is always a plus. :)

We ate it over baked potatoes with a little cheddar cheese over the top... Mmmm. Thanks for the recipe!
